March 14 is Pie Day, one of the best days of the year! I can not think about pies without thinking about my sweet mother. She is the pie queen. Thanks mom for always making the best home made pies and passing your knowledge down to me! And yes, in case you were wondering we frequently text each other pictures of our pie designs. :0)
Here is her recipe for triple berry pie!
Pie Crust
2 cups flour
1 tsp salt
1/4 cup water
1/3 cup shortening
1/3 cup butter
In a bowl, sift together 2 cups flour and 1 tsp salt. Take 1/3 cup of the flour mixture and place aside it in a separate bowl. Add 1/4 cup cold water to the 1/3 flour mixture. Combine until a paste is formed. In original bowl, cut in 1/3 cup shortening and 1/3 cup butter. When the shortening and butter are pea sized pieces, add in the paste. Mix with hands until a dough ball is formed. Divide dough into two even balls. Roll one dough ball out on a slightly floured surface. Use hands to gently press in and form to pie dish. Prick the bottom of the dough using a fork. Roll out the other pie dough to use on top. Let your creativity flow! Make the top as crazy or as traditional as you want!
